Paleo Apple Muffins

Paleo Apple Muffins

  • 4 eggs
  • 2 1/4 cups almond meal
  • 1 organic apple, finely chopped
  • 1 very ripe banana
  • 1/4 cup coconut oil
  • 1/3 cup water
  • 1/2 tsp baking soda
  • 1 heaping tbsp cinnamon

  1. Preheat oven to 350.
  2. Using a fork, mash the banana in the bottom of a large mixing bowl.
  3. Add the eggs, water, and apples to the bananas and mix well.
  4. In a medium-size mixing bowl, add the almond flour, baking soda, and cinnamon, and mix well.
  5. Melt the coconut oil, add it to the wet mixture, and whisk together.
  6. Pour the dry ingredients into the wet ingredients and mix with a spoon until all ingredients are combined.
  7. Grease your muffin tin with coconut oil or grass-fed ghee.
  8. Fill each tin about 3/4 full. Bake for 15-20 minutes.You will know they are done when you can insert a toothpick into the middle of a muffin and it comes out clean. 
  9. Serve hot out of the oven.
  10. Makes approximately 16 muffins.
